Buñuelos de algas marinas

Buñuelos de algas marinas are our own unique recipe based on a traditional Spanish recipe for Buñuelos de bacalao. Buñuelos are light fluffy fritters soft on the inside and crispy on the outside commonly eaten all over Spain. These buñuelos are made with traditional welsh laverbread rather than salt cod. Originally put on the menu as an experiment they instantly became a hit and have stayed on our menu ever since.
Laverbread is now thought of as a “superfood”, rich in protein and containing over 50 known minerals and trace elements regarded as essential body requirements. It provides high quantities of calcium, iron, potassium, magnesium and iodine and vitamins A ,B, B2, C & D
As the seaweed that is used to make laverbread is the same seaweed use to make sheets of sushi nori we decided to pair these buñuelos with a homemade wasabi mayonnaise.
